Have you met George Banks?

The long-awaited rooftop bar opened its doors Friday 2 November.

Proprietor Phil Coorey is excited for Toowoomba to finally see what he and his team have created in the space.

“Construction began on the venue more than 18 months ago now and it’s been an exciting ride to finally arrive at this major achievement – our opening weekend.”

“We took inspiration from the heritage building’s past life and have transformed the rooftop space into an amazing modern bistro and intimate bar with amazing views across the CBD,” Mr Coorey said.

The venue’s name, inspired by the distant dad in the film Mary Poppins, was originally suggested by the building owner’s daughter, Sarah Collins.

“Sarah actually suggested the name during one of our site inspections when we were first
looking at the space. We knew we wanted to include the building’s past as an operating bank
and, also, incorporate a theme that was reflective of the anticipated atmosphere of the venue,”
Mr Coorey added.

The Mary Poppins influence extends to a stunning upside down umbrella chandelier that was created by Brisbane Joinery & Shopfitters, who also designed and executed the entire fit out.

George Banks will serve lunch and dinner, Tuesday to Sunday. Taking full advantage of the
abundant Darling Downs food basin, George Banks will focus on a share style menu, changing
regularly to properly showcase Toowoomba’s local and seasonal produce – complemented by a
unique wine and drinks menu.

Head Chef Chris Mann is originally from Toowoomba and has come home to the Garden City to
head up the kitchen at the exciting new venue.

“Having the opportunity to work with great produce and to see the passion in the producers
gives me great inspiration and ideas. I am always looking for local products to incorporate into
the menu. We are using local tomatoes, honey, pork, quail, beef, grains and even local charcoal
for our grill,” Chris said.

“The Toowoomba hospitality industry has transformed in recent times and we are really excited
to unveil an experience that complements the growing dining industry in Toowoomba,” Mr.
Coorey added.
